December 2007... in chateau brewery The X-mas hal dark 14° was served (4)

February 2008... as a celebration of leap year 850 litres of a next special beer was poured into a pump - Leap honey beer. 50 kg of honey from the area of the Jeseniky Mountains were used for its production. "February 29“ is a great event. Four-year period gives the product some mystic and on the top of that the owner of the chateau celebrates his 11th birthday“ adds the manager with a smile, Mr Koudelka. Surprising is, that people are serious about our company with our own beer. It might be cause of the weather but our visitors drunk as much beer in January as we expected in two months". (5)

April 22, 2008... Baron the brewer filled first pint ofládek 16° May – meridian beer, with typical green gold colour. „May 16“ is a next idea how to prepare traditional tastefull  natural lager for unique occasions. Production was based on the original prescription from 1590. „„The prescription is kept in a secret. I can tell you only that it is composed of dandelions, leaves of nettles or root of burdock. Simply of all spring herbs. Its also good against tiredness. The nickname „meridian“ is bacause of the history. People had usually drunk the beer after midday.“ More than 900 litres of that beer was made for our guests. They drank it in few days. (6)

Honey-sweet beer made us to think about idea to found probably first registry of special beers in the Czech Republic. Experts confirmed that beer with higher degree of alcohol is tastier after longer maturation in colder places.

There should be saved around 20 to 30 litres in 2 litre bottles in a historic kiln of the malt. Today in a wine – cellar where the temperature is always the same as well as dark, peace and quiet. Archival beer should be ready for drink after half year..

„We suppose we are going to manage to produce absolutely finest and soft taste and we are going to serve it as a rarity in small glasses,“ added Koudelka.

May 2008... May 2008… First light and gluten free 9 degrees beer made of buckwheat was probably made in small brewery in the Czech republic. Unfiltered 9 is delicious refreshment in hot summer days and of course suitable for everybody who is allergic to gluten. This type of beer is produced in Germany and England in small amounts. Making of that beer was 4 times longer than production „normal“ beer. It lated almost 48 hours. „We had to be patient for example when the beer is decanted (in fact non peeled buckwheat is decanted and the machine used to be plugged). Except the allergic people, that beer is also suitable for cyclists. But only in amount which is possible to drive to destination for them," added Koudelka. (7)

September 2008... Baron the brewer finished developing of 17° Saint Wenceslas lager. The beer was characterized by dark cream and honey flavour. Guests could taste it during Saint Wenceslas´s celebrations which commemorated a year of opening the chateau. Three more kinds of a malt were added into that special beer – Bavarian, toffee and roasted. Than special herbs and 40 kilograms of honey. The beer was being matured for 70 days. (8)

November 2008... Saint Martin´s beer 11° half dark lager springed into existence from not empty cider and it is our most expensive beer. 900 litres winy beer equals light beer plus 400 litres of a red stum from Petr Skoupil´s vineyards in Velké Bílovice.

"It was shroud cause we didn´t know if the beer is good. There is a one problem connected with juice where the lot of acids are inside and they could kill brewer´s yeast. If the wine ripen in a spring time, I would recommend it as a summer refreshment“, describes the brewer and adds that he had never heard about beer made of juice of grapes.

Because of grapes the beer has little of red colour, the beer is cool and little bit sour. It is similar to fruit beer and it is goes well with goose or other fat meals. But it is also good in a wine glass with little bit of shrub and tea spoon of honey. (9)

November 2008
... There was honey used again for brewering of 14digree X-mas special beer as a quality confirmed from a past. It was also flavoured with vanilla, clove and star anise. (10)

February 2009... 7 kilograms of dried nettles were used for production of 700 litres od 11degree nettle beer. Nettles originated from valley Borová in the Beskydy Mountains. It has stronger green colour, high refreshing and against a flu.

„For prevention of a flu it is neccessary to drink 3 to 4 beers daily“, had a joke manager of the chateau.

There is a long tradition of drinking nettle beer in Scotland and in England. „Some breweries sometimes brewer that type of beer. But they use only essences and add them into the beer at the end of brewering. We add dried nettles just at the moment when a malt is brewered with hops.“, emphasized Koudelka. (11)

May 2009... 11° Women beer is twelfth and at the same time first special of our new brewer Tomáš Hub. 11° wheaten, fermented from exterior special is very unique. Tomáš focused on female taste buds.

„It was based on a fact, that woman and full aged girls are interested in our special beers with their bitter taste. That´s why we made special female beer Pikard® and it is mainly for them. Connection of old findings and know-how of our new brewer we managed to make original recipe. Because in Ostrava nobody before brewered a wheaten beer and nobody before named it as a female. We are also trying to reach primacy in Europe.."adds brewer.

Brew of new special includes tarditionally used hops from town Žatec called „červěňák“ and half divided batch of barley and wheaten malt for two mashes. Key component are special French yeast wchich assist exterior rising and give the beer unique spicy taste with little bit of clove and cinnanmon flavour. At first sight in the beer you can see gold colour with deep hazes – typical for wheaten beers. Cream gives the beer authority. „Important component are also next principles based on fruit element but it is our secret", says Koudelka and adds that Pikard is trend and sexy.

Aprlil 30 at sabbat time we started to serve the female beer, it had 6°C and was served in glasses 0,4 litres with a moonshaped-piece of orange.

„Maybe it was because of a charism of the young brewer, however, the beer bacame number one very quickly. So we decided to serve it all over the summer,“ adds Koudelka. (12)
